Ingredients
1/4 cup palm shortening
1 egg, room temperature
1/4 cup coconut sugar
2 TBSP honey
2 tsp pure vanilla extract
1 1/2 cups almond flour
2 TBSP coconut flour
1/2 tsp baking soda
1/2 tsp sea salt
1/2 cup dark chocolate pieces
Method
Preheat oven to 350 degrees. Beat the egg and shortening in a large mixing bowl until well combined. Add the coconut sugar, honey and vanilla extract and mix until combined. Add the flours, baking soda and salt and mix well. Stir in the chocolate pieces by hand. Use a large tablespoon to scoop balls of the dough, placing them on a baking sheet lined with parchment paper. Lightly press them down to flatten, making disks bout 1/2-inch thick. Bake for 10 minutes until the cookies are browned around the edges and cool on a wire rack.
