Warning: Do NOT skim through this recipe and then let weeks go by before you decide to make these burgers yourself! You will hit yourself upside the head wondering why you didn’t heed this warning and try the recipe out right away.
If you are like me, making burgers can get a little boring. After all, there really isn’t much to get excited about when you simply throw a well-formed chunk of meat in a pan or on a grill. I needed some inspiration so I turned to the one culture that has no shortage of enthusiasm – the Greeks! This Greek Buffalo Burger is fit for the gods. Serve with a little Tzatziki sauce, red onion and tomato and I swear you will be dancing with bells on in no time at all.
Makes 4 burgers; Each burger (including pita pocket) contains 365 calories, 31 grams of protein, 19 carbohydrates, and 18 grams of fat.
- 1 pound ground buffalo
- 1 egg
- 1/4 cup almond flour/meal or bread crumbs
- 1 tsp dried oregano
- 1 tsp dried tarragon
- 1/2 cup feta cheese, crumbled
- 1/2 tsp salt
- 1/2 tsp pepper
- 4 whole wheat pita pockets
Combine egg, flour, oregano, tarragon, feta, salt and pepper in a mixing bowl. Work the ground buffalo into the mixture, taking care not to overwork the meat. Form into 4 equal-sized patties.
Preheat a grill or grill pan over medium heat. Cook the burgers for approximately 4-5 minutes each side, or until the meat is no longer red in the middle. While the burgers finish cooking, toast pita pockets in a toaster or on the grill until warmed through.
Divide the burgers among the pita pockets, top with Tzatziki, onion and tomato. Enjoy!
